CHABLIS, FRANCE
CHABLIS LES VIEILLES VIGNES BY PASCAL BOUCHARD 2019
Chablis makes some of the most mineral, and terroir-expressive wines on the planet, and Chablis Les Vieilles Vignes by Pascal Bouchard 2019 is the best value Chablis we tasted while in France last year. This thirst quenching, classically crafted wine comes from ancient vineyards planted across the appellation, and coming from the stand out 2019 vintage, it really over-delivers. Full of tension, richly textured and packed with crisp stone fruit normally found in wines double the price, this is an outstanding achievement.
Why is Chablis is the purest Chardonnay? Chablis, the wine, is 100% Chardonnay. No other grape is allowed in the four Chablis Appellation d’Origine Contrôlée (AOC), and no one has seen the need to change that. The two meld together so well. The grapes prosper in the cool climate and clay-limestone soil, which results in possibly the purest Chardonnay on the planet.
Burgundy lovers know that Chablis offers some of the absolute best quality-to-price Chardonnay. Chablis Les Vieilles Vignes by Pascal Bouchard 2019 is really hitting its stride, showing balance right out the gate.
Until you’ve enjoyed one of Pascal Bouchard’s creations yourself, you’re missing out.

TASTING NOTE / “An intriguing Chablis from old vines made with some extra lees ageing in old casks which has added an additional layer of complexity to the vibrant, fresh, concentrated citrus fruit characters on the palate. The standard Chablis is ‘classique’ and this Vieilles Vignes bottling takes the wine to another level. Plenty of precision and potential for ageing here.”
Bouchard’s old-vine cuvee casts textbook Chablis aromas of high toned chalky minerals, freshly grated lemon zest and sweet butter. Lithe and sprightly on the palate, the Chablis’ brilliant acidity and smoky, flinty mineral spine lift its core of buttery citrus fruit. The wine’s old-vine quality comes to the fore on its long, flinty, soil-inflected finish. Showing impressive grip, persistent minerality, resinous old-vine fruit and a most comfortable price point, this a superb choice for pairing with shell fish, light fish dishes, vegetable souffles, or to serve as an aperitif.
