When Italians use the term vino da meditazione (“meditation wine”), it usually refers to a sweet wine. Something to be sipped slowly and contemplatively. While that description could apply to any wine, provided the depth and complexity is there—and Bosan Ripasso Valpolicella Superiore by Cesari 2017 truly qualifies.

Ripasso is when a finished wine is subjected to a second maceration on the skins and pulp of dried grapes which gives the wine an extra concentration and complexity. It grew out of another tradition unique to Valpolicella, the production of decadent, high-octane Amarone.

This is a serious Ripasso that has more in common with its big brother Amarone than with many other Ripassi.

TASTING NOTE / “Fennel, red cherries and plum on the nose followed by a wide spectrum of fruit and savoury flavours. The palate is still fresh with well-integrated oak.” “A rich, fruity valpo with dried berries and cherries and some chocolate and spice undertones. It’s full-bodied and flavourful. Medium soft tannins and balanced, lively acidity. Drink now.”

Founded in 1936, Gerardo Cesari became synonymous worldwide with wines from the Verona area. Back in the early Seventies, Cesari Amarone was one of the first to reach all five continents. And so began the success story of Cesari wines all over the world. Today, Gerardo Cesari produces unique, elegant, fine, balanced wines, drawing on tradition but using the latest knowledge in vineyard cultivation, using environmentally sustainable growing techniques.

Pictured below are the traditional racks used by the winemaker to dry the grapes, used in today’s bottle. The whole drying process, lasting between 4 and 5 months, as well as the pressing, fermentation and a first refining of the wines, takes place in the Fumane cellar. A sophisticated process that allows the humidity level and ventilation of the cellars to be carefully controlled, ensuring the grapes remain perfectly healthy.
